Marogui was born from a simple conviction: to cook with what Michoacán offers us, at the moment it gives it to us. No forcing ingredients out of season, no looking far away for what the lake, the fields and the sierra of Michoacán offer us.

The space we settled into in Morelia's Historic Center wasn't an image decision. It was the only option that made sense. Morelia is a city that proudly guards its history, its architecture and its way of living around the table. We wanted the space to speak of our cooking before the first dish was served.

The Beginning

Learning to know the producers, to understand their cycles, to work with whatever arrives each week instead of imposing a fixed menu: that's how Marogui was built, table by table.

Over time we added more producers: families from the Purépecha Plateau who grow native corn, Tancítaro orchard growers who bring us avocado at just the right ripeness, charanda distillers from Uruapan who make the only rum with a designation of origin in Mexico. Today we work with direct suppliers, all of them Michoacán-based.

The Cuisine We Chose

We never wanted to do chef-driven cuisine in the most self-centered sense of the term. What matters to us is that the ingredient shows, that it's felt — that the diner can trace where everything on the plate comes from. The techniques we use — the comal, the wood-fired oven, volcanic stones, nixtamalization — are as much a part of the land as the ingredients themselves.

We work with fresh, local ingredients whenever possible, and we respect the origin of every ingredient: where it comes from, who grew or caught it, how it made its way into the kitchen. We favor producers close to home because we know their work and trust it. We don't chase a menu that changes constantly; we aim for cooking that's honest and true to the ingredient. On special dates we do present unique culinary experiences, like our traditional Cena de Ánimas, and we occasionally develop special menus for important celebrations. These are exceptional experiences, not a constantly changing menu.

Today

We're still in the same space, with the same values we opened with. We still believe in cooking with respect for the ingredient, for Michoacán and for the people who sit at our table, without rushing. Michoacán has one of the richest and least-known pantries in Mexico, and our obligation — and our privilege — is to put it on the table.
